Kombucha is a live, antioxidant-rich, belly-soothing, probiotic of fuzzy goodness. :)
It is prepared by feeding a scoby (yeast-bacteria) green & black tea and sulphur-less sugar. After a period of fermentaion, the scoby converts this into an enzyme-rich good-for-the-gut drink. Once the liquid is converted, we infuse botanicals, in this case - home grown fish mint and lime - in a slower, second fermentation. The total process until it's a carbonated bevie, takes about 3 weeks. So as to bring this drink to you live (that is, alive with it's protein-enzymes; without any chemical agents that stop fermentation), we prepare small batches only.
Mint is known to cool the gut and help with digestion, making it great for gut inflammation (e.g., IB) or constipation.

Given the drink is live, it will keep fermenting once it's with you. Refrigeration slows down the maturation, even producing a beautiful bubbly close to champagne nearing the end of the Best By period. In case you forgot to refrigerate, or it's passed the 2 months, the kombucha will slowly have converted into vineger. And now it makes for an excellent additive to your salad dressings!
