Bamboo is rich in vitamins (A, B6, E) and minerals (calcium, magnesium, phosphorous), high in fiber, low in cals, carbs, sugars, and fats. 

 

This monsoon special is available for a couple of months in the year, when the bamboo shoots out new sprouts. Tender bamboo harvested and diced.

 

In preparation, bamboo needs to be blanched to remove it's slight bitter presence. Boil the diced bamboo once in salt water and drain the water. Then cook. Bamboo has subtle flavours, brings a nice crunch to any dish, and is low in calories. It lends itself beautifully to Indian cooking (simply sauté with onion, salt and turmeric) or SE Asian cooking.
